Convert to eSIM and use local SIM card for international travel

Hello,

I'd like to keep my US number when travelling internationally but also acquire a local number for wherever i'm at through a prepaid carrier. Would converting my current US Sim to eSim and then installing a local SIM card accomplish this? I have the ATT International Plan active on my phone. Thanks!
