I am using a phone on someone else's account. Is the person that pays for this account able to see my text messages on what I am saying. Are my conversations between me and my family and friends private? Or can the person who runs this account go online or go to the store and read my personal stuff?

No. They can see a log of your texts which is date, time and number only, not the actual messages.
