Using my own router
The apartment I am moving to has AT&T fiber as an option. I want to know if I have the option to use my own router because the 2 in 1 models I have used in the past from AT&T have had problems with down times and other customization.

AT&T Internet requires the use of leased AT&T equipment. You can add a router behind the AT&T gateway but you cannot replace the AT&T equipment.

You should be able to place the gateway into pass through mode (but not bridge mode) and use your own router.

Since I have to lease their equipment and I cannot even use their equipment as a bridge I will have to use another provider

If you're an Internet-only customer (no Uverse TV or Phone coming through the AT&T gateway) then you do have the option of bypassing the gateway completely. It requires using your own router in addition to a $15-$20 dumb switch (the TP-Link TL-SG105 is a good choice). Here's a link to the simple procedure.
