Locked Iphone 14 Pro :(

I have a 14 pro at&t locked, idk what to do.

i buy the phone from a guy and when he showed me it was working perfectly with a non at&t esim. 

i am getting this message: 

"Looks like your device doesn't have a phone number associated with it. Start your request again and select No when asked if you have an AT&T"

and somethimes this other one:

"It looks like your device is on an installment plan and you haven't paid it off yet. Follow these steps to pay off your installment plan early. Then, wait 48 hours before you submit a new request. If you pay off your device as part of your regular bill, you'll need to wait until the start of your next bill period."

Are you saying that the phone is actually locked to AT&T, even though the seller showed it working with a non-AT&T SIM?  Are you sure it’s really locked?  What does it say in the phone settings under carrier lock?  If it doesn’t say “No SIM restrictions”, it’s locked.  If it’s actually locked, and wasn’t paid off, as the message says, then you got scammed and there is nothing you can do.  You can’t pay off someone else’s phone, so unless the original owner pays off the phone, the phone wont be unlocked and will be useless outside of AT&T and it’s MVNOs.

That’s the risk of buying a phone “from a guy”. Get your money back, if possible.

This guy that i got the phone from, when i called him he told me he also bought a financed apple watch and didnt pay it.

He called support a supposedly pay it and told me to wait 48 hours and the phone will be unlocked 72 hours passed and the phone is still locked...

You got scammed.  If he bought brand new devices and didn't pay, AT&T will block for fraud.

Then tell “that guy” to unlock the phone for you.  If he actually paid it off, he can get it unlocked.  Although, I’m pretty sure he won’t/can’t.  Telling you the phone was unlocked, and faking that it worked with a non-AT&T SIM, is pretty much a clue.
